对于海蜇这种海产品,我们经常凉拌着吃,但是冬季天气太冷,吃凉菜,有的人可能会引起肠胃的不适,不用担心,今天跟大家分享一道油呛双脆的做法,冷吃热吃都不错。它的双脆就是白萝卜和海蜇皮,将两种食材放在一起,口感爽脆,吃着不油腻,而且做法也很简单,喜欢的朋友不妨试试。
用料:
海蜇皮,白萝卜,香菜,大蒜,盐,生抽,醋,香油,油。

做法:
我们这边没有新鲜的海蜇皮卖,只有这种咸咸的、经过加工腌制过的海蜇皮。用水冲洗掉这种海蜇皮表面的盐分后,改刀切成细丝。

将切好的海蜇丝用清水浸泡起来,切好以后再泡,会比较好泡一些,能大大缩短泡的时间。我泡了大概一个多小时就不咸了,记得泡的时候,还需要多换两次水,这样会快一些。

等海蜇不咸以后,捞出海蜇丝。(我是直接拌的,如果您想焯水也可以,用热水把海蜇丝烫一下,温度控制在70度左右,如果太烫,海蜇就会缩掉。)

洗净白萝卜的外皮,切成薄片后再改刀切成细丝;香菜切成小长段。

把切好的萝卜丝放入大碗中,加盐抓一抓,等萝卜丝腌制出水,捞出,用水清洗掉表面的盐,稍微挤一挤萝卜丝,把萝卜丝放入碗中。

放入沥水后的海蜇丝,把两种食材拌匀。加一点盐和鸡精调味,拌匀后撒上切碎的蒜末。

锅内倒油,加一点香油增香,等油热后,将热油淋在蒜末上面,呛香蒜末,用筷子拌匀,再滴入一点醋。(热油炝过以后,这些食材也会逐渐变成温温的。)
