准备食材:新鲜草鱼、葱姜蒜、干辣椒、八角、花椒、香叶、辣椒酱。
烹饪步骤:1、新鲜草鱼,剖腹掏出内脏后清洗干净,沿鱼骨方向片下鱼肉,切成鱼片备用。

2、往鱼片中倒入适量淀粉、胡椒粉、盐,用手抓匀,静置在一旁腌制待用。

3、起锅倒油烧热,将准备好的辅料下锅炒香,就在此时趁热倒入准备好的酸菜,下锅爆香。

4、将鱼头鱼骨先放入锅中翻炒几下,向锅中倒入清水(鱼头和鱼骨也可以不要,酸菜爆香后直接倒水)。

5、倒入清水后,大火烧十分钟,揭开锅盖,倒入辣椒酱。

6、将腌制好的鱼片,均匀的铺在锅里,以便受热均匀,再倒入适量酱油,盖上锅盖大火煮十分钟。

7、煮十分钟后,倒入适量味精,在准备装鱼的盘底铺上包菜,将煮好的鱼片盛入盘中。
