首先,准备八个鸡蛋,然后取出蛋清备用。记住,只要蛋清。

准备一袋豆沙馅,取出后搓成小圆球,粘上一层玉米淀粉,轻轻晃动,让豆沙馅粘均匀。

刚才准备好的蛋清用打蛋器朝一个方向搅打,全程均速抽打,大约五分钟,搅打成奶油状,能立住打蛋器即可。

往搅拌好的蛋清中加入一大勺玉米淀粉、一大勺普通面粉。一定要上下搅拌均匀!(记住,是上下)

用筷子夹住豆沙馅,放到蛋泡糊里转两圈,然后往上一挑夹出来,如下图。

起锅烧油,油温两成热,将褒好的豆沙馅下入锅中,不要油温太高,炸雪衣豆沙一定要油温低一些

全部放入后改成中火。期间用勺子不断往上面浇油。这样才能够炸至定型。

定型以后大面积往上浇油。这样受热更均匀。炸到颜色变成金黄色就可以出锅了。
